Leftover Lovers’ Chicken Soup

A couple recipes back, for my Favorite Chicken Dinner recipe, I said: “I have a roast chicken rule in my house…Never make just one! Any time I do chicken, I always do 2.” Well, if for any other reason, this is the recipe that makes left over roast chicken a commodity to be grateful for…it makes the best broth and soup! Next time you have leftovers try this simple recipe and I promise you’ll love it—so yummy!

Ingredients
  1. 2 whole chickens leftover skin and bones
  2. leftover chicken meat
  3. extra virgin olive oil
  4. carrots
  5. onion
  6. celery
  7. additional veggies (optional)
  8. salt and pepper
  9. parsley
  10. fresh basil leaves
Instructions
  1. Toss all leftover skin and bones from 2 whole chickens in the crock pot on low overnight.
  2. In the morning strain off the top layer of fat/risiduals from top of crockpot.
  3. Remove or strain out bones.
  4. In a stock pot, sautée evoo, carrots, onion, celery and whatever veggies desired til softened. Generously season with good s&p.
  5. Add in broth and bring to a boil.
  6. Add 1-2 cups brown rice and simmer on low 12-15 min. or until rice is cooked.
  7. Add leftover chopped chicken, a handful of finely chopped parsley and 10 chopped fresh basil leaves.
  8. Serve and enjoy
