Avocado Hummus Sandwich

I made these vegetarian sandwiches the other day for a little lunch hang with a girlfriend of mine. Super easy and yummy. You won’t be missing the meat.  They’re packed with protein and for being vegetarian they’re plenty hearty!

Ingredients
  1. 4 slices GF bread or Ezekiel Bread
  2. (4-6oz.) thin slices TJ's raw milk cheddar cheese
  3. 1 med. avocado
  4. 1/8 cup hummus
  5. sea salt/pepper/ salt free cavendars (to taste)
Instructions
  1. Just toast the bread with the cheese slices on it until melted in toaster oven.
  2. Then slice avocado in half and use 1/2 per. sandwich. (mash up on toast until spreadable).
  3. Next add a layer of hummus and sprinkle with a pinch of sea salt. pepper, and s.f. cavendars.
Notes
  1. (makes 2 sandwiches)
  2. Slice in half and serve with a fresh baby greens salad and sliced fresh berries or fruit!
